CLEVER WAYS TO PREPARE AND SERVE MOI MOI

You won't believe the number of ways you can make moi moi presentable. For those of you who don't have an idea of what am talking about; Moi Moi or Moin Moin as some people call it is a very popular Nigerian dish. This dish is made from pureed beans, depending on how you want it, the Moi Moi is served mainly as a breakfast dish accompanied with hot Corn Porridge which is referred to as Ogi locally or hot Custard.
Moi Moi made in the afternoon is normally served with Bread or Garri (locally blended cassava powder). The evolution of Moi Moi has changed, traditionally wrapped in banana or umbrella leaves, Moi Moi has since moved into a more grander form of plating.

This meal is truly a delicious delicacy and some people don't know whether it's a meal or desert(side dish). At parties the famous Owanbe jollof rice is usually served with Moi Moi this makes it a desert because it is served with a main dish but in some other scenario it is served with Hot Akamu/Ogi/Corn porridge as a main course. This examples goes to show that it can be both Now how do you prepare Moi Moi?

Ingredients
1.5 cups Black eyed beans
1/2 Medium onion (chopped)
1 (chopped) Red bell pepper (Tatashe)
5 Scotch bonnet pepper (ata Rodo)
4 Eggs (boil and peel 2 of the eggs )
1 Tablespoon Ground crayfish
3 Tablespoons Palm oil
2 Bouillon cube (Maggi)
Salt (to taste)
Here are several ways you can plate your Moi Moi:
Baked in a bread pan and garnished with eggs, sausages and mint leaf
Garnished with shrimps and vegetables.
Decorated with a stick fork
Traditional Appearance
Made into a roll up
Baked with a cake pan
Note: you can also use vegetable oil to replace the palm oil if you live in a country where you can't find the palm oil.
